Your Role:
As Itamae (Head Sushi Chef) at Mr. Lau’s, you will:
🍣 Oversee and lead the sushi team, ensuring precision and consistency in every dish.
🍣 Create and innovate – develop new sushi concepts and seasonal specials.
🍣 Ensure top-tier quality, selecting the freshest ingredients and maintaining food safety.
🍣 Train and mentor junior chefs, fostering a culture of excellence.
🍣 Work in a fast-paced environment, maintaining efficiency without compromising on quality.
About You:
🔥 Extensive experience in sushi preparation, from nigiri to maki rolls.
🔥 Mastery of knife skills and handling fresh seafood.
🔥 Leadership abilities, able to manage a kitchen team effectively.
🔥 Passionate about Japanese cuisine, with a deep understanding of traditional and modern techniques.
🔥 Highly organised, ensuring smooth service during peak hours.
